What do the different user statuses in ConfTool mean?
Can I add more statuses?

You find a list of all user statuses in ConfTool / ConfTool Pro here:

You cannot add or define more user roles or statuses yourself but you can update options of some of the statuses when you go to:
Overview => Settings => Settings for User Registration => Main Settings for User Registration and Management

Furthermore you can combine the available statuses, therefore giving you many different options.
